Jeremy had an English breakfast fry up without me one morning so I thought I’d make pancakes in the spirit of Pancake Day! Although it was not the traditional crepe-like pancakes usually made on the Pancake Day, it is still pancake!
This is an easy and fast recipe and portion size is right on so no extras left over to overindulge in. No sugar is needed as the ripe banana adds natural sweetness to the pancake.

Serves 1 – makes 5 pancakes
1/3 cup plain flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
1/2 mashed over ripe banana
1/4 cup milk of choice (I used unsweetened almond milk)
a pinch of salt
Topped with tablespoon of maple syrup and butter
Mash the banana and mix well with the vanilla extract and milk.
In a separate bowl, mix the flour, baking powder and salt together.
Combine all ingredients together and stir well.
Lightly grease the pan with butter and fry 1 scoop of the batter at a time on medium high heat, turning over when bubbles start appearing.
Add your toppings of choice! I added a bit of butter and a drizzle of maple syrup.
I had a few blueberries left in the fridge so added them to 2 of the pancakes to make blueberry pancakes Just mix it in with the batter and cook as usual.
